Rarely do I come across such a thing of beauty, that is useful and tells the history of copper making. Hidden under a load of scrap was this perfect gem - perfect in it's manufacture and it's story - not at all perfect from years of use, I love these old pans, the ones that have never let you down, the ones that sit on your stove like they have always been there.
This sauté has had just that, years of use, years of service but also the respect from it's owners to have it repaired. There is a braze repair on the edge of the base that is visible both inside and outside. This is an old repair that is still as functional as the day it was made, the pan is water tight and sits flat.
This has been made using the castellation method. There are two pieces of copper fused together with seams clearly visible on the sides and base. Gorgeous!
The tin has been replaced many times - Chef's retinning a little lumpy but perfectly acceptable. It's dark and non-stick. The outside has seen a lot of sautés in it's lifetime and has the wear to show for it.
This sauté remains as good at it's job today as it was 150 years ago - bumps and brusies, suraface scratches deeper scratches and a repair not withstanding - this old fellow was made to last and by golly it has.
This is 32cm across 12 1/2 inches, it is 10.5cm high or 4 1/8th inches it is a massive 64 cm from edge to handle or 25 1/4 inches.
It weighs 3.9 kilos or 8lbs 11 ozs and is made from 1.8mm Copper.
It is stamped BD and has the remanants of a mark on the outside Buff.... and PA..S. also BP.

As we are a registered French company, we are given the option by our couriers, to charge postage by the kilo (just over 2 pounds), so you don't pay any more postage than you need to. We charge only for postage charges and nothing for packing - we double box and use peanuts, polysterene and bubble wrap. Should we save any shipping costs we refund on the day of posting. Should the worst happen, as we always send fully insured, we always refund or replace.
